i say happy you say birthday.

isaac's birthday was so much fun! so much fun i thought it was mine at times. i planned and planned his gifties out perfectly. first and foremost, the beach cruiser!! on thursday night we went out with my parents to happy sumo and guess what was waiting for him when he got home...the jaguar! lets be honest, it was kind of a gift for myself as well as isaac, but now we can ride our bikes together!

on friday, ike's bday, we both took work and school off and played all day. we slept in and i woke up before him and very quietly made him a surprise breakfast. then we made our first trip to our pool!

then we were off to park city! it just so happened that g love and special sauce, one of isaac's favorite bands (and now mine) were playing at harryo's in park city on his bday! such a gift.
we love pc. before this we went shopping at the outlet mall and each got a little giftie! i love bdays.

after dinner i had to have a treat so we made a quick stop at cow's for ice cream. delicious.
ryan and erin celebrated with us, we love them.
kalai opened for g love. you go kalai.
g love himself.
sooooooooo amazing and talented. this was one of my favorite concert ever. we were so close we touched his hand!
on saturday morning we headed up to fairview to continue the birthday fun. we met isaac's parents for lunch and had a yummy meal.
our new friends!one of the cupcakes i made him. isaac picked these flowers for me while i was napping!
after my long nap isaac and i took a picnic over to our favorite garden. we had capri suns and everything.

on sunday we went to my parent's house for dinner and to have one last bday party.
for ike's final surprise i re-created his favorite dessert from outback steakhouse. vanilla ice cream rolled in toasted coconut + warm brownies + hot fudge + strawberries = pure bliss.

it was a fun weekend to say the least. this boy is spoiled don't you think.

Chicken with Prosciutto Spinach Cream Sauce

Chicken with Prosciutto Spinach Cream Sauce

This is a delicious and very rich tender chicken accompanied by a prosciutto and spinach cream sauce.





INGREDIENTS:



2 eggs

1 cup milk

2 cups Italian seasoned bread crumbs

1 teaspoon garlic powder

1 teaspoon paprika

salt and pepper to taste

1/4 cup vegetable oil

4 thin-sliced skinless, boneless chicken breast halves

1/2 cup white wine

1 tablespoon all-purpose flour

1 pint heavy cream

1 teaspoon minced garlic

1 1/2 cups diced prosciutto

3 cups chopped fresh spinach

1 cup shredded mozzarella cheese







DIRECTIONS:



1. Beat the eggs and milk together in a small bowl; set aside. Stir the bread crumbs, garlic powder, paprika, salt, and pepper together in a separate bowl.



2. Heat the vegetable oil in a skillet over medium heat. Dip the chicken breasts into the egg mixture and press into the bread crumbs, shaking off the excess bread crumbs. Cook the chicken breasts in the hot oil until golden brown on both sides, no longer pink in the center, and the juices run clear, about 6 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).



3. Remove the chicken breasts from the pan, set aside, and keep warm. Pour the white wine into the pan; bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Increase temperature to medium-high and stir in the flour. Cook and stir until the wine has reduced to half its original volume, about 1 minute. Whisk in the cream and garlic and bring to a simmer. Season to taste with salt and pepper; cook and stir until thickened, about 8 minutes. Stir in the prosciutto, spinach, and mozzarella cheese; cook and stir until the cheese has melted and the spinach has wilted. Pour the sauce over the chicken breasts to serve.via

we're famous!

beachers.

beach cruisers + husband + hawaii = awesome.
seriously.
day 5 of our honeymoon was a relaxer. the day before we drove all over the island so we slept in, hit the beach, and rented some beach cruisers to ride around honolulu. it was sooooooo much better than walking, hawaii gave me some nasty blisters.
i was real excited about the bikes. and check out the bell. we kept dinging dinging dinging all around town and when we wanted someone to move we dinged. i would have been sooo annoyed but we kept doing it anyway.
just me.
on the beach! with beach cruisers! a real dream come true.
we biked our way over to keo's and had some yummy fish and chips.
we found this magical boardwalk and rode all around honolulu dinging at people.
did a little shopping here. spot ike in this picture and notice all the other folks. something must have been interesting...
our hotel!! the rainbow tower. so fitting.

only one more day left of the honeymoon to document!
its like leaving hawaii all over again...

we cook.

we are such cooks. cooking together is one of our favorite things. my friends know that i was a little worried about the whole "cooking" thing but guess what, its not that hard! isaac is a pro and i'm catching on pretty darn quick. of course, i stick to very basic things...but here are some of our favorites.

where the magic happens.

isaac makes tempura! it is soooooo delish and just as good as our fav happy sumo. if you want to know how to make this one we'll have to ask isaac to do a special post. i have no idea how he does it. its like magic.

we love teriyaki rice bowls. rice + marinated teriyaki chicken (mr. yoshida's from costco is the best) + steamed cabbage, broccoli and carrots + crunchy noodles = yummers.

alfredo!! this one we cheated a little by ordering alfredo sauce and breadsticks from olive garden. its a steal...you just make your own noodles and you have olive garden for like $7 big ones.

spaghetti. pretty classic and pretty delicious.

shephards pie. so quick and easy. and corn muffins. let me let you in on my latest find. if you love corn bread...you'll love the jiffy corn muffin mix. only .44 cents! we seriously eat them with everything...haha my mom thinks its weird. but its good. try it.

2 months!

we've hit the 2 month mark! i am the happiest i have ever been.
and i love bragging about my husband on my bloggie. i don't know what i would do without isaac. school stresses me out more than anything and he takes such good care of me. i break down and cry due to stress and lack of sleep approximately once a week and he is a pro at making me feel better.
plus he cooks, cleans, and is always making me laugh.
having a husband rules.

oh hawaii.

day 4 of the honeymooner was a blast. we rented a car for one more day and drove up to scuba dive in hanauma bay. ike was such a scuba king. me on the other hand...not a scuba girl. i am so scared of fishies. i creeped around the top of the water and saw a few fishies but thats about all i could tolerate without squealing. unfortunately my digi was still dead so no pics.......

not!

my sweet hubby was making small talk with the guy in subway and found out a costco was really close! so what did he do? he drove as fast as he could and bought me a brand new digi!

we drove back up the shore and stopped at hanauma bay again. we swam in there!

there are so many beautiful spots up the north shore.

then up the shore some more. this is one of isaac's favorite pics of the trip. i'm pretty sure he would entitle this "poopy pants". i got a little grumpy and i can't remember why...
but that grump went away real quick once we got here! we loved our snow cones from the day before so much that we drove 1+ hour to get here again. it closed at 6 and we got there at approximately 5:50. it was a close call.
happy again.
we found a secret beach! isaac just turned off into one of the neighborhoods and came across a beach that all the locals use. it was our favorite beach spot.

one last stop at the temple. so fab.

after our road trip we went right back to our hotel, ate some hawaiian food (well, isaac did...i hate it), and crashed in bed. we were pooped.
